Old Kempton Distillery runs a 3 day Distillers course which gives each student the opportunity of a lifetime- the chance to learn everything, from distilling to the business behind the scenes.

  • Hands-on opportunity to learn about distilling at an operating distillery

  • Visit to Australian industry leaders in still manufacturing, coopering and whisky wash production
  • Discuss the various aspects of distilling with Old Kempton Distillery staff

Our course offers a hands on opportunity to learn about distilling at an operating distillery. During your distillery course you will work closely with Old Kempton Distillery staff, giving you a close look at the distilling and barreling processes involved in the production of single malt whisky and other distilled products. This is a good opportunity to learn about distillery plant equipment including water filtration, preparation and cleaning regimes. We will look at whisky in the various stages of production and maturation while also covering ATO requirements for distilled spirits and discussing the application process for a manufacturer’s licence. Included in your course is a visit to Australian industry leaders in still manufacturing, coopering and whisky wash production.

During your time at Old Kempton Distillery there will be time to discuss the various aspects of distilling with our team. You are welcome to make your own notes and take photos, there are no secrets and we would like to see you fully understand the operation of a craft distillery. The process at Old Kempton Distillery is hands on and not computerised, enabling you to fully understand the mechanics of distillation. 

Throughout your course you will have the opportunity to take short breaks so you can gather your thoughts and compile any questions you may have. 

We will go through step-by-step the questions asked in the license application, identifying what the Australian Tax Office will require from you and what you will need to do to show the tax office and customs departments that you capable of safe distillation, production recording and payment of excise returns. We will also discuss what information is required to be collected during production and how it is to be kept safe. 

We will also help with any distillery design issues, what equipment you will need and where to source it. The course also covers anticipated volumes, forecasting and production schedules so that a decision can be made on the suitable size of plant and equipment to complete your business plan. These sessions are designed to enable you to feel comfortable with your new knowledge. This is the time for you to ask those nagging questions – design, costs, size of operation and expected outcomes.  


Old Kempton Distillery provides morning tea, lunch and afternoon daily. Coffee and tea is available each day. 

All food is made and prepared on site using premium Tasmanian ingredients. Please inform us of any food allergies by return email.
